Typical products
From our chestnut wood we obtain a tasty chestnut flour, once very used in the Tuscan gastronomy. In these years, we have been rediscovering many uses of this so-called “sweet flour”, from “gnocchi” to “baked pasta” ("pasta al forno"), from bread to “polenta”, from pancakes ("frittelle)" to biscuits, from “necci” to “castagnaccio”. With chestnuts you can prepare : country soup, “pasta alla boscaiola” and several typical dishes of the Tuscan area, in particular of the Sienese zone. The dishes made with this flour or directly with chestnuts have an exclusive and ancient taste.
During springtime, summer and autumn, it's possible to taste vegetables grown in our own kitchen garden. The most common cultivations are : potatoes, tomatoes, squashes, cucumbers, green salad, eggplants, peppers, green beans, etc... With these vegetables we prepare pottage, fresh tomato sauce, fried squashes (including fried blossoms), roast potatoes, mixed salads, etc...
Besides chestnuts, our generous wood offers us many fantastic mushrooms that grow spontaneously also in the old charcoals wisely distributed in different parts of our forests. We can offer to our guests dried or in-oil mushrooms (even fresh ones when it's the proper season!). We guarantee that the taste of our mushrooms carry on all the fragrance of the wood and of the ground where they grow naturally.
The certification of Biologic Producer (code ITBAC096927), obtained in 2005, guarantees that all our products have to respect the EU disciplinary of biologic farms about fertilization, fight against spongers and propagation materials. We are very proud to offer products that safeguard the environment, people and traditions.
